Moroccan Sweet Potato Stew

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp chopped coriander

  • 0.5 tsp turmeric

  • 1 tbsp harissa

  • 1 onions, CHOPPED

  • 1 cloves garlic

  • 2 Small Sweet Potatoes

  • 34 ml drained canned chickpeas

  • 34 ml crushed tomatoes

  • 3 cups vegetable stock

  • 3 cups spinach leaves

  • salt

  • pepper

  • lemon wedges

  • cilantro leaves

Step 1

Heat a deep pot to medium-high and add the olive oil.

Step 2

Once it’s hot, add the cumin, coriander, turmeric and harissa paste and let them cook for 1-2 minutes.

Add the onion and garlic and let them cook for around 10 minutes, or until the onion is translucent.

Step 4

Add the sweet potatoes, chickpeas, crushed tomatoes and vegetable stock.

Step 5

Lower the heat to medium and let it cook for 30 minutes.

Step 6

Season with salt and pepper and add the spinach leaves, stir for 5 minutes and remove from heat.

Step 7

Serve with lemon wedges and fresh cilantro.
