1 kg veal or lamb shoulder
1 tsp ground ginger
1 tsp turmeric
1 pinch saffron
1 tsp salt
0.5 tsp ground pepper
4 cloves garlic
2 dl water
5 tbsp olive oil
1 kg turnips
1 small bunch coriander

To a tagine pot, add the meat, spices, crushed garlic and 2dl of water. Stir to combine and cook over low heat for 15 minutes.
Stir in half of the sliced onion, oil, and add more water to completely cover the meat. Cook, covered, over medium-low heat for 45 minutes.
Meanwhile, peel and chop the turnips into quarters, and chop the coriander. Add them all to the pot together with the remaining onions.
Cover the pot and continue to cook for 20 minutes, or until the sauce thickens.
Garnish with a bit of chopped coriander.
