In a small bowl, dissolve the yeast with 3 tablespoons of warm water.
To a mixing bowl, add the flour, semolina, and salt. Stir to combine, then make a space in the middle and pour over the yeast mixture. Add warm water, little by little, mixing into the flour until you get a slightly sticky dough.
Transfer the dough to a floured surface and knead for 5 minutes, or until the dough is smooth.
In a small bowl, combine the neutral oil with melted butter.
Dip your clean hands into the oil-butter mixture and grease the dough entirely. Form mandarin-sized balls (around 5-6 cm diameter), and place them on a plate, leaving some space in between.
Cover with a clean towel and allow it to rest for 10 minutes at room temperature.
Oil the working surface and take one ball. Dip your hands into the oil-butter mixture, and start to flatten it from the center outwards. Grease your hands several times and gently stretch the dough until thin and slightly transparent.
Sprinkle with a bit of fine semolina. Start folding the stretched dough from sides towards the center to form a square shape.
Place on a sheet pan, baste with the oil and butter mixture and allow them to rest for 10 minutes. Repeat with all the dough balls.
Preheat a non-stick pan over medium heat and grease with the oil-butter mixture. Flatten the msmen slightly, just until it doubles its size, but still keeps the square shape.
Cook until golden-brown and cooked through, for about 5 minutes, flipping frequently. Serve warm with butter and honey.
