0.3 cups olive oil
1 tsp ground cumin
1 tsp turmeric
0.5 tsp salt
0.5 tsp ground pepper
1 cauliflower head
2 tbsp juice of lemon
1 tbsp olive oil
0.5 tbsp harissa
0.5 tsp salt
0.5 tsp pepper
0.3 cups Chopped pistachios

Preheat the oven to 220°C/430°F
Cut the cauliflower head in 3-4 big steaks.
Line a baking tray with baking paper or foil and arrange the cauliflower steaks.
In a small bowl, combine olive oil, cumin powder, turmeric powder, salt and ground pepper.
Brush the cauliflower steaks with the olive oil and spices combination and bake for 25-30 minutes or until browned.
In a separate bowl, combine lemon juice, olive oil, harissa paste, salt and pepper to make the dressing.
Serve the cauliflower steaks with the dressing and top with chopped pistachios, pomegranate seeds, mint leaves and cilantro leaves.
