1 tbsp yeast
350 gr flour
1 tsp salt
2 tbsp olive oil
350 ml water
3 tbsp zaatar
3 tbsp olive oil

In a small bowl, combine milk, sugar and yeast.
In a big bowl, combine flour and salt, make a hole in the middle and add the olive oil, yeast mixture and ½ of the water.
Combine with a spoon and start incorporating more water as it needs it, you will end up with a soft and sticky dough, but it should be dry enough so you can transfer to the table.
Flour a surface and transfer the dough. Knead for at least 10 minutes.
Transfer to a greased bowl, cover with a tablecloth and let it rise for 1 ½ hours, or until it doubles it’s size.
Mix zaatar and olive oil.
Preheat the oven to 180ºC/360ºF.
Divide the dough in 2 halves and roll each into a circle.
Cut the circle with a pizza cutter in 8 pieces, make a small cut in each of the short sides and top with the zaatar and oil mixture.
Roll each croissant into a half moon shape.
Transfer to a paper-lined sheet, top with a bit more zaatar and sesame seeds, and bake for 20 minutes, or until golden brown.
