نضع مقلاة كبيرة على نار عالية ونقلب بزيت الزيتون الطماطم المعلب المفروم والثوم المقشر المطحون والبقدونس المفروم الناعم والكمون والفلفل الحلو والملح والفلفل.

Place a large frying pan over high heat and stir in the olive oil, can chopped tomatoes, peeled and crushed garlic, finely chopped flat-leaf parsley, cumin, paprika, salt, and pepper. 


Placez une grande poêle à feu vif et ajoutez l'huile d'olive, les tomates en morceaux, l'ail pelé et écrasé, le persil plat finement haché, le cumin, le paprika, le sel et le poivre. 

تُغلى ثم تُغطّى المقلاة وتُخفّف النار وتُترك على نار هادئة مع التحريك من فينة لأخرى لمدة 25 دقيقة تقريبًا حتى تتحول إلى صلصة سميكة. إذا لاحظنا أن الصلصة جافة جدًا أثناء عملية الطهي نضيف ملعقتين كبيرتين من الماء. نتذوقها ونضبط التوابل بالملح إذا لزم الأمر.

Bring to the boil, then cover the pan, reduce the heat to low and leave to simmer gently, stirring every now and then, for about 25 minutes until the mixture becomes a thick sauce. If it looks like the sauce is too dry at any point during the cooking process, add a couple of tablespoons of water. Taste and adjust the seasoning with salt if necessary. 


Portez à ébullition, puis couvrez la casserole, réduisez le feu à doux et laissez mijoter doucement, en remuant de temps en temps, pendant environ 25 minutes jusqu'à ce que le mélange devienne une sauce épaisse. Si la sauce semble trop sèche à un moment quelconque du processus de cuisson, ajoutez quelques cuillères à soupe d'eau. Goûtez et rectifiez l'assaisonnement en ajoutant du sel si nécessaire. 

نستخدم ملعقة كبيرة لفتح مساحة للبيض ونقوم بتكسير البيض برفق على الصلصة ونعيد تغطية المقلاة ونتركها تطهى لمدة 6 دقائق أو حتى يتماسك البياض ويبقى الصفار سائلاً. يُزين بالبقدونس المفروم ويُقدم على الفور مع الخبز.

Use a large spoon to make some space for the eggs, gently break the eggs straight into the sauce, re-cover the pan and cook for 6 minutes or until the whites are set but the yolks are still runny. Garnish with chopped parsley and serve immediately with bread. 


Utilisez une grande cuillère pour faire de la place pour les œufs, cassez délicatement les œufs directement dans la sauce, recouvrez la casserole et faites cuire pendant 6 minutes ou jusqu'à ce que les blancs soient pris mais que les jaunes soient encore liquides. Décorez de persil haché et servez immédiatement avec du pain.
