Simple Vegetables Soup

  • 1 tbsp olive oil

  • 0.5 butternut squash

  • 1 courgettes

  • 1 carrots

  • 500 ml chicken stock

  • 250 ml coconut milk

Step 1

Heat a deep pot to medium-high and add the olive oil. Once it’s hot, add the butternut squash, zucchini and carrot.

Cook for a couple of minutes or until the veggies start to brown.

Step 3

Add the veggie stock (it should cover the veggies, if needed you can add more water).

Step 4

Bring to a boil and let it simmer at medium temperature for around 20 minutes, or until veggies are tender.

Step 5

Transfer all the ingredients to a food processor, add half of the coconut milk and process until creamy.

Step 6

Serve with a bit more coconut cream.
