There are few things kids love more than some old school mac and cheese - and they won’t believe how delicious this carrot version is, the taste just blends perfectly and no one will spot the difference. Talk about adding some nutrients to an everyday dish! For the most picky eaters, you can process the carrot after being cooked and before adding the cheese, that way you won’t have any difference in texture (although you should try the regular version, as it barely shows!)   • 2 cups bananas

  • 1 tbsp salt

  • 1 tbsp olive oil

  • 1 cups carrots, GRATED

  • 1 cups vegetable milk

  • 2 cups bananas

  • 0.5 cups Gouda Cheese

  • 0.3 cups Breadcrumbs

Step 1

Cook the pasta in boiling salted water until al dente (8-10 min), careful not to over cook it so we will be baking it for a few more minutes.

Preheat the oven to 180ºC/360ºF.

Step 3

In a non-stick skillet, add the olive oil and carrot. Let it cook for a couple of minutes, or until it softens.

Step 4

Add the milk and 1 ½ cup cheddar and gouda cheese and cook until it melts.

Step 5

Incorporate the cooked macaroni and mix well.

Step 6

Transfer to 4 ramekins or individual baking dishes (you can also transfer to a big baking tray). Top with the rest of the cheddar cheese and breadcrumbs.

Bake for 15 minutes, or until the cheese melts.
