300 gr fine semolina
1 sachet baking powder
0.5 tsp salt
50 gr butter, at room temperature
150 gr plain natural yogurt
1 dl oil
1 tbsp honey

In a mixing bowl, add the semolina, baking powder and salt. Stir well to combine.
Add the softened butter and using your fingertips, mix it well into the semolina. Add the yogurt and mix; the dough should resemble wet sand.
Stir in a couple of tablespoons of warm water, and allow the mixture to absorb the liquid for 10 minutes.
Lightly powder with a bit of flour on your clean working surface. Place the dough and lightly work it, then spread with your hands to an even thickness, around 1cm or ½-inch thick.
Using a glass upside-down or a round cookie cutter, cut out round pieces into the dough.
Preheat a non-stick pan over medium heat. Drizzle with some cooking oil. Cook the circles in batches over medium-low heat, until golden on both sides and fluffy on the inside. Try to avoid overcrowding the pan, and cook the galettes in several batches.
Drizzle with honey and enjoy.
