6 tbsp olive oil
2 onions, FINELY CHOPPED
2 carrots, GRATED
2 tbsp chopped parsley
1 tsp paprika
0.5 tsp ground pepper
500 gr white flour
0.5 tsp baker’s yeast
0.5 tsp salt

Heat the oil in a large frying pan over medium heat.
Add in the onions, carrots, parsley, paprika and pepper. Reduce the heat to low and saute the veggies for 10 minutes. Set aside and allow it to cool.
In a mixing bowl, combine the flour, yeast and salt. Add water, little by little, and stir to combine. Knead until you get a smooth and malleable dough.
Divide the dough into small, mandarin-sized balls and place them on a sheet pan. Lightly brush them with oil.
On a clean surface, flatten the dough balls using a rolling pin, until very thin. Add a tablespoon of stuffing in the middle of each, then spread it over the whole surface of the dough.
Fold in four to resemble an envelope. Lightly baste with oil and allow it to rest on the sheet pan for 10 minutes.
Preheat a large non-stick pan over medium heat. Cook the stuffed msemen until golden brown for around 8 minutes, flipping every 2 minutes.
