300 gr almonds
250 gr sesame seeds
500 gr plain flour
125 gr icing sugar
20 gr green aniseed
25 gr cinnamon
100 gr butter
60 gr honey

Step 1
Preheat the oven to 180°C/360°F fan. Spread the blanched almonds out in a shallow roasting tin and roast for 10–12 minutes or until lightly golden, giving them a good stir halfway through to make sure that they roast evenly. Remove from the oven and leave to cool.

Cook the sesame seeds in a frying pan over medium-high heat without any added oil. Stir them regularly so they don’t burn. Set aside and leave to cool.

Spread the flour out in a roasting tin and roast for 45 minutes or until the flour is lightly golden and turns into a pale yellow, giving it a good stir every 15 minutes to make sure that it roasts evenly.

Once the almonds and sesame seeds are cool enough to handle, put aside some roasted almonds to garnish the Zamita.

Grind the almonds and sesame seeds using a food processor until finely ground and powder-like. Make sure not to overprocess them or they might turn into a paste. Transfer the ground almonds and sesame seeds to a large bowl.

Once the flour is ready and has cooled down to room temperature, add it the ground sesame seed and almond mixture along with the icing sugar, aniseed and cinnamon.

Warm the honey and melt the butter in a small saucepan on the hob over a medium heat and immediately pour it over the dry mixture. Use a large spoon or your hands to mix all the ingredients together and create a smooth dough. Make sure to only use your hands once the dough has cooled down.

Transfer the Zamita dough in shallow plates or in bowls. If desired, garnish with coarsely chopped almonds on top, using your hands to press the almonds in the Zamita.
