4 Small Sweet Potatoes
2 tbsp flour
1 can drained canned chickpeas
0.5 onions, FINELY CHOPPED
2 cloves garlic
0.3 cups chopped parsley
0.3 cups mints
1 tsp ground cumin
1 squeezed lemon
1 tsp kosher salt
0.3 tsp ground pepper
2 tbsp sesame seeds
Keep cooking the same

Preheat the oven to 180ºC/360ºF.
Scrub the sweet potatoes to remove any debris.
Line a baking sheet with baking paper and arrange the sweet potatoes.
Bake the sweet potatoes for 45 minutes, or until soft on the inside.
Remove the meat of the sweet potatoes and let it cool.
Transfer sweet potatoes, all-purpose flour, chickpeas, onion, garlic cloves, parsley, mint, ground cumin, lemon juice, salt and pepper to the bowl of a food processor and process until smooth.
Use a cookie or ice cream scoop to make balls (around 1 1/2 inches).
Line another baking sheet with parchment paper and arrange the balls. Top with sesame seeds.
Bake for 30-40 minutes, or until crunchy on the outside
