240 gr dried chickpeas
2 tsp baking soda
240 gr tahini paste
5 tbsp juice of lemon
4 cloves garlic

Place the chickpeas “ dried soaked overnight and drained (or 2 x 400g canned chickpeas, drained)“ and the baking soda in a large deep skillet over medium heat. Cover the chickpeas with water. Leave until the chickpeas are soft and cooked, this will take about 30 to 40 minutes. Use a large spoon to remove any of the foam at the surface of the water.
Once cooked, drain the chickpeas, and place it in a food processor along with the rest of the ingredients and 4 tablespoons of cold water. Process until smooth. Add more water to adjust the consistency if desired. Keep in the fridge for up to two days.
Serve with a generous drizzle of olive oil.
