2 small red apples
1 tsp powdered cinnamon
1 tbsp brown sugar
120 gr flour
1 tsp baking soda
1 tsp sachet baking powder
30 gr sugar
0.3 tsp salt
50 gr greek yogurt
50 ml vegetable milk
1 tsp vanilla extract

Cut the apples - skin on - into small cubes.
Heat a non-stick skillet to medium and add the apples, sprinkle with cinnamon powder and brown sugar.
Cook for 10-15 minutes, or until the apples are soft and mushy.
In a bowl, combine all-purpose flour, baking soda, baking powder, sugar and salt.
Add the egg, greek yogurt, vegetable milk and vanilla extract. Mix until well combined (don’t over mix, you can even leave some crumbs).
Add half of the apples and fold them in.
Grease a non-stick skillet with cooking spray and place your shaped silicone molds.
Pour over the mixture (leaving around 2mm from the top) and wait until bubbly. Turn it over and cook for 2 more minutes.
Serve topped with the rest of the apples and maple syrup and confectioners sugar.
