Ingredients

Green Lentils

  • 3 tbsp olive oil

  • 1 onions

  • 1 cloves garlic

  • 2 courgettes

  • 1 red bell pepper

  • 0.5 small butternut squash

  • 500 gr green lentils

  • 5 dl water

  • 0.5 tsp paprika

  • 0.3 tsp pepper

  • 1 tsp tomato paste

  • 1 small bunch Parsley

Step 1

Heat the oil in a deep skillet over medium heat. Saute the onion and garlic for 5 minutes.

Add the courgettes, pepper and butternut squash to the skillet.

Step 3

Cook for 10 minutes, stirring occasionally.

Step 4

Place the washed lentil in a soup pot and boil for 15 minutes.

Step 5

Once the lentils are done cooking and tender, add them to the skillet with the veggies.

Step 6

Add in 5 dl of water and all the spices, tomato paste and half of the chopped parsley. Mix to combine.

Step 7

Cover with the lid and cook, over medium-low heat, for 20 minutes.

Step 8

Serve in a deep plate and garnish with the remaining chopped parsley.
