300 ml warm water
1 tbsp sugar
6 gr yeast
380 gr plain flour
1 tsp salt
60 ml olive oil
200 gr bananas
0.3 cups chopped parsley
0.5 onions, FINELY CHOPPED
2 tbsp olive oil
1 juice of lemon
1 tbsp sumac
1 tsp salt

Combine warm water, sugar and instant yeast in a bowl. Let it sit for 10 minutes or until foamy.
Place the flour and salt in a bowl and combine.
Make a well in the center and add the yeast mixture slowly, combining with a wooden spoon.
Transfer to a working surface and knead until smooth, for around 5 minutes. Start incorporating the oil until fully combined, the dough will be oily.
Cover with a table cloth and let it proof until it doubles its size. Around 1 hour, depending on the temperature.
Remove the dough from the bowl and divide in 12 pieces. Reshape them into round bowls, transfer them to a tray with oil and let it proof for another half an hour.
To make the filling combine thawed spinach, parsley, onion, olive oil, lemon juice, sumac and salt.
Preheat the oven to 200ºC/390ºF. Line a baking sheet with parchment paper.
Press each ball into a flat disc, keeping a circular shape.
Fill each circle with 2 tbsp. of filling and pinch two ends of the dough, sealing them together at the top. Pinch the other flap and press them all together.
Bake for 15-20 minutes, or until golden brown.
Serve warm with tahini or spiced Greek Yogurt.
