Place defrosted peas in a flat dish and squeeze them with a fork, you want about half of them pureed and the rest untouched (if you have a picky eater at home, you can switch this up and crush them all).
Add the feta cheese and break it, combining it with the peas.
Transfer to a big bowl. Add the egg, lemon zest, za'atar, all-purpose flour and mint leaves. Combine fully.
Make 6-8 patties and reserve.
Heat a non-stick skillet to medium-high and add the olive oil. Once it's hot, place the fritters and let them cook on both sides - around 8 minutes each, or until they are golden brown on both sides.
Serve with tzatziki or your favorite sauce.
